You need:
• 1 lb. pork (tenderloin cubed)
• 2 sm. onions, sliced
• 2 green or red peppers (or 1 of each), cut into squares
• 3 tbsp. olive oil or salad oil
• 2 tbsp. fresh lemon juice
• 1 clove garlic, mashed
• 1/2 tsp. salt
• 1/2 tsp. ground pepper
• Ginger
• Tomato barbecue sauce (3/4 c. tomato catsup, 3 tbsp. brown sugar, 2 tbsp. soy sauce)
Instructions:
Cut one cup of meat into 1 1/4 to 1 1/2 inch cubes. Alternate meats with slices of onion and cubes of red and green peppers on skewers. Mix oil, lemon juice, garlic, salt and pepper together. Pour over meat. Marinade 1 to 2 hours turning once or twice. Prepare ginger tomato barbecue sauce. Grill loaded skewers over hot coals, or under broiler for 6 to 8 minutes per side or until done to your liking. Brush with barbecue sauce. Serve immediately.
