You need:
• 1 rotisserie chicken, chopped
• 3/4 cup fresh cherries, pitted & chopped
• 1 large stalk celery, chopped
• 1/4 cup walnuts, chopped
• 1/2 teaspoon lemon juice
• 1/2 cup mayonnaise
• 1/2 red onion, finely chopped
• Salt & Pepper
• 4 large croissants
• Lettuce
• Sliced tomato
Instructions:
Set croissants, tomato, and lettuce aside. Mix all remaining ingredients together and let rest for 15-20 minutes in refrigerator. Slice croissants and stack lettuce, tomato, and chicken salad on each and serve.
